With the weather pretty cold and icky outside today, it is a perfect day for Chunky Irish Potato Soup! I’ve made this recipes many times, it is one of my favorites! 🙂
I served it today with breadsticks, and it made a nice lunch!
Chunky Irish Potato Soup
Ingredients:
3 medium red potatoes {peeled & cut into 1-inch cubes}
3 Tbs butter
1 small onion, finely chopped
3 Tbs all-purpose flour
Crushed red pepper flakes
Ground black pepper
3 cups milk
1/2 Tsp sugar
1 cup shredded cheddar cheese
1 cup cubed cooked ham
Directions:
Bring 2 cups of water to a boil in a large saucepan. Add the potatoes and cook until tender. Drain and reserve the liquid. Set aside the potatoes. Measure 1 cup of cooking liquid (from potatoes), adding water if needed. Set aside.
Melt the butter in a saucepan over medium heat. Add the onion and cook until translucent, stirring frequently. Add flour and season with red pepper flakes and black pepper to taste. Cook, stirring 3 to 4 minutes.
Gradually add the potatoes, then the reserved cup of cooking liquid, milk and sugar to the onion mixture. Stir well, then add cheese and ham. Simmer over low heat for 30 minutes. Stir frequently.
This is a filling, delicious, comforting soup! Enjoy!
