These muffins are so easy to make! They are healthy, and they freeze well. I like them because they are not super sweet, but are still yummy! 😉
Healthy & Delicious Granola Oat Muffins
1 cup granola
1 1/2 cups quick-cooking oats
1/3 cup chopped almonds
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 cup milk
2 eggs
1/4 cup maple syrup
1 teaspoon vanilla
1 cup fresh or frozen mixed berriesPreheat oven to 350 degrees
In a medium bowl, mix granola, oats, almonds, baking powder and cinnamon. In a second medium-sized bowl, beat milk, eggs, maple syrup and vanilla with whisk. Add to oat mixture, and stir to combine.
Fill muffin cups three-fourths full and top with berries.
Bake about 25 minutes or until set.
Freeze any extras on a sheet pan until solid, if desired. Once frozen, seal in freezer bag and pop into the freezer to have later. 🙂
Reheat in microwave in 30-seconds to 1-minute to heat thoroughly.
Surprise! These were a hit with my girls {even though they weren’t that sweet!} 😉
They would be great for breakfast or a healthy snack anytime!
